Salsiccia all'Uva

Harvest food from Umbria. The first frost-touched grapes are tossed in the pan with sausages from the autumn pig — the most Umbrian thing on earth.
Ingredients
- 800 g Italian pork sausage links
- 600 g red wine grapes (or Concord/black grapes)
- 120 ml red wine
- 2 tbsp olive oil
- 1 sprig rosemary
- 1 clove garlic
- 1 tsp black pepper
Method
- Prick sausages. Brown in olive oil with smashed garlic and rosemary, 8 minutes.
- Add grapes (whole). Cook 5 minutes — they will begin to burst.
- Pour in wine. Simmer 25 minutes uncovered. The grape juice and wine reduce to a sticky glaze.
- Crack pepper. Serve hot with bread to mop the sauce.
