Pollo alla Cacciatora

'Hunter's chicken' — what a Tuscan hunter's wife made from yard-bird while he was out chasing boar. Olives, rosemary, tomato, wine — the pantry of the hills.
Ingredients
- 1500 g whole chicken, jointed
- 400 g San Marzano tomatoes
- 200 ml red wine
- 100 g black olives
- 2 sprigs rosemary
- 5 leaves sage
- 3 cloves garlic
- 1 medium onion
- 4 tbsp olive oil
- 2 tsp salt and pepper
Method
- Season chicken pieces with salt and pepper.
- Brown skin-side-down in olive oil with smashed garlic, rosemary, sage. Turn, brown other side.
- Add chopped onion to the pan, sweat 5 minutes.
- Pour in wine, reduce by half.
- Add tomatoes (crushed) and olives. Simmer covered 35 minutes, turning chicken once.
- Uncover, reduce sauce 10 more minutes. Serve with bread or polenta.
