'Hunter's chicken' — what a Tuscan hunter's wife made from yard-bird while he was out chasing boar. Olives, rosemary, tomato, wine — the pantry of the hills.

  1. Season chicken pieces with salt and pepper.
  2. Brown skin-side-down in olive oil with smashed garlic, rosemary, sage. Turn, brown other side.
  3. Add chopped onion to the pan, sweat 5 minutes.
  4. Pour in wine, reduce by half.
  5. Add tomatoes (crushed) and olives. Simmer covered 35 minutes, turning chicken once.
  6. Uncover, reduce sauce 10 more minutes. Serve with bread or polenta.
