Pesce Spada alla Ghiotta

Swordfish runs the Strait of Messina between Calabria and Sicily — both regions cook it 'alla ghiotta' (greedy-style) with tomato, olives, capers.

Method

  1. Soffritto of finely diced onion and celery in olive oil with chilli, 8 minutes.
  2. Add crushed tomatoes, olives, capers. Simmer 12 minutes.
  3. Slide in swordfish steaks. Spoon sauce over. Cover, simmer 8 minutes — turn once.
  4. Off heat, shower with parsley. Drizzle olive oil. Serve with bread.
