Pesce Spada alla Ghiotta

Swordfish runs the Strait of Messina between Calabria and Sicily — both regions cook it 'alla ghiotta' (greedy-style) with tomato, olives, capers.
Ingredients
- 700 g swordfish steaks
- 500 g plum tomatoes
- 80 g green olives
- 2 tbsp capers
- 1 stalk celery
- 1 medium onion
- 1 chilli red chilli
- 1 handful parsley
- 4 tbsp olive oil
Method
- Soffritto of finely diced onion and celery in olive oil with chilli, 8 minutes.
- Add crushed tomatoes, olives, capers. Simmer 12 minutes.
- Slide in swordfish steaks. Spoon sauce over. Cover, simmer 8 minutes — turn once.
- Off heat, shower with parsley. Drizzle olive oil. Serve with bread.
