Tropea's red onions are so sweet they are eaten raw like fruit. Naval ships called at Tropea's harbour for them in the 17th century.

  1. Slice the onions paper-thin into rings. Soak 10 minutes in cold water with the vinegar (this tames the bite).
  2. Wedge the tomatoes, slice the cucumber thick.
  3. Drain onions. Combine all in a wide bowl.
  4. Dress with olive oil, salt, oregano, torn basil. Serve at room temperature with bread to mop the juice.
