Tropea's red onions are so sweet they are eaten raw like fruit. Naval ships called at Tropea's harbour for them in the 17th century.
Ingredients
- 4 medium Tropea red onions
- 400 g ripe tomatoes
- 1 medium cucumber
- 1 handful basil
- 1 tsp dried oregano
- 4 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp salt
Method
- Slice the onions paper-thin into rings. Soak 10 minutes in cold water with the vinegar (this tames the bite).
- Wedge the tomatoes, slice the cucumber thick.
- Drain onions. Combine all in a wide bowl.
- Dress with olive oil, salt, oregano, torn basil. Serve at room temperature with bread to mop the juice.
