Fileja alla 'Nduja

'Nduja is Calabria's spreadable chilli salami, made in Spilinga in the hills above Tropea. Stir a spoonful into anything — pasta, pizza, eggs — for instant Calabrian heat.
Ingredients
- 400 g fileja or fusilli
- 120 g 'nduja di Spilinga
- 400 g tomato passata
- 2 cloves garlic
- 3 tbsp olive oil
- 60 g pecorino, grated
- 1 handful basil
Method
- Warm olive oil with smashed garlic. Add 'nduja, break it up with a spoon — it dissolves into spicy red oil.
- Add passata. Simmer 15 minutes — the sauce is fiery red, perfumed.
- Cook fileja in salted water to al dente.
- Toss in the sauce, with a splash of pasta water.
- Plate. Pecorino, basil. The chilli does the rest.
