'Nduja is Calabria's spreadable chilli salami, made in Spilinga in the hills above Tropea. Stir a spoonful into anything — pasta, pizza, eggs — for instant Calabrian heat.

Method

  1. Warm olive oil with smashed garlic. Add 'nduja, break it up with a spoon — it dissolves into spicy red oil.
  2. Add passata. Simmer 15 minutes — the sauce is fiery red, perfumed.
  3. Cook fileja in salted water to al dente.
  4. Toss in the sauce, with a splash of pasta water.
  5. Plate. Pecorino, basil. The chilli does the rest.
