Shepherds' stew — wild fennel grows on every Lucanian hillside in spring. Cooked in a copper pot over an open fire.
Ingredients
- 1500 g mutton or lamb shoulder
- 500 g potatoes
- 1 large onion
- 2 medium carrot
- 2 stalks celery
- 2 medium tomato
- 200 ml red wine
- 1 bunch wild fennel fronds
- 3 leaves bay leaves
- 3 tbsp olive oil
- 2 tsp salt and pepper
Method
- Cut mutton into 4 cm chunks. Brown in olive oil in a heavy pot.
- Add chopped onion, carrot, celery. Sweat 10 minutes.
- Pour in wine, reduce by half.
- Add tomato, bay, salt, pepper. Cover with water by 3 cm.
- Simmer 2.5 hours — mutton falls apart.
- Add potato chunks and wild fennel in the last 30 minutes.
- Serve in deep bowls with crusty bread.
