Shepherds' stew — wild fennel grows on every Lucanian hillside in spring. Cooked in a copper pot over an open fire.

Method

  1. Cut mutton into 4 cm chunks. Brown in olive oil in a heavy pot.
  2. Add chopped onion, carrot, celery. Sweat 10 minutes.
  3. Pour in wine, reduce by half.
  4. Add tomato, bay, salt, pepper. Cover with water by 3 cm.
  5. Simmer 2.5 hours — mutton falls apart.
  6. Add potato chunks and wild fennel in the last 30 minutes.
  7. Serve in deep bowls with crusty bread.
