Urbino's flaky cousin of piadina. The lard-spiral trick creates puff-pastry-like layers from a cast-iron pan.
Ingredients
- 500 g '00' flour
- 2 eggs eggs
- 150 ml warm water
- 120 g lard, softened
- 1 tsp cracked black pepper
- 1 tsp salt
- 300 g prosciutto and cheese for serving
Method
- Combine flour, eggs, water, salt, pepper. Knead 8 minutes. Rest 30 minutes.
- Divide into 4 balls. Roll each into a thin disc.
- Spread softened lard generously across the disc. Roll up like a jelly roll. Coil into a snail. Rest 15 minutes.
- Press the snail flat, then re-roll into a 5 mm disc — the lard creates flaky layers.
- Cook on a hot cast-iron pan 3 minutes a side until bronzed and puffed.
- Split horizontally, fill with prosciutto, soft cheese, sautéed greens — whatever's around.
