Urbino's flaky cousin of piadina. The lard-spiral trick creates puff-pastry-like layers from a cast-iron pan.

Method

  1. Combine flour, eggs, water, salt, pepper. Knead 8 minutes. Rest 30 minutes.
  2. Divide into 4 balls. Roll each into a thin disc.
  3. Spread softened lard generously across the disc. Roll up like a jelly roll. Coil into a snail. Rest 15 minutes.
  4. Press the snail flat, then re-roll into a 5 mm disc — the lard creates flaky layers.
  5. Cook on a hot cast-iron pan 3 minutes a side until bronzed and puffed.
  6. Split horizontally, fill with prosciutto, soft cheese, sautéed greens — whatever's around.
