Basilicata's spring stew — the four vegetables of the season cooked in one pan with a few scraps of pork.
Ingredients
- 400 g fresh broad beans, shelled
- 4 artichokes artichokes, trimmed and quartered
- 300 g new potatoes
- 4 onions spring onions
- 100 g pancetta or guanciale
- 3 tbsp olive oil
- 100 ml white wine
- 1 tsp salt and pepper
Method
- Render pancetta in olive oil. Add sliced spring onions, sweat 5 minutes.
- Add potato cubes and artichoke quarters. Cook 5 minutes.
- Pour in wine, let it cook off. Cover with water just to the surface of the vegetables.
- Cover and simmer 20 minutes.
- Add broad beans. Simmer 8 minutes more. Season.
