Insalata Caprese

From Capri — the colours of the Italian flag, the simplicity of a fishermen's lunch.
Ingredients
- 600 g ripe tomatoes (sun-warm)
- 400 g mozzarella di bufala
- 1 handful basil leaves
- 4 tbsp best olive oil
- 1 pinch flaky salt
Method
- Slice tomatoes 1 cm thick. Tear mozzarella into rough pieces — never slice, the rough edges hold dressing.
- Arrange on a plate, alternating, with basil between every piece.
- Dress with the best olive oil you have, salt, and nothing else. No balsamic — that's a tourist insult.
