  1. Slice tomatoes 1 cm thick. Tear mozzarella into rough pieces — never slice, the rough edges hold dressing.
  2. Arrange on a plate, alternating, with basil between every piece.
  3. Dress with the best olive oil you have, salt, and nothing else. No balsamic — that's a tourist insult.
